The wonderful flavor of esrogim makes a delicious liqueur that can be enjoyed on its own, or mixed into some creative cocktails. It’s fun and easy, and can make a great gift for your friends and family after the chag! This recipe can easily be halved, doubled, etc. depending on how many esrogim you can collect from friends and family after Sukkot.
- 2-3 esrogim, rinsed well
- 3 cups vodka
- 1.5 cups super-fine sugar (do not use powdered sugar)
1. Trim the thick yellow peel from the esrogim and chop it into small pieces. Discard the rest of the fruit.
2. In a 4 cup or larger container combine the chopped esrog peel with 2 cups of the vodka. Seal and store for at least 48 hours up to a week, in a cool, dark place.
3. Strain the esrog peels from the vodka. Add 1.5 cups super-fine sugar and the remaining 1 cup vodka, and stir until the mixture is clear. Seal the container and store in a cool, dark place for 6-8 weeks.
4. Open and enjoy!
